Tomato & Eggs with Beef Stir-Fry

    Chop the tomatoes into bite-sized pieces.

    Beat the eggs in a bowl until well mixed.

    Slice the beef into thin strips.

    Heat oil in a pan over medium heat and scramble the beaten eggs. Remove and set aside.

    In the same pan, stir-fry the beef strips until browned.

    Add the chopped tomatoes to the pan with the beef and cook until soft.

    Return the scrambled eggs to the pan and mix with the beef and tomatoes.

    Add the cooked rice to the pan and stir everything together.
  9. 9.
    Pour in soy sauce and continue stir-frying until everything is well combined and heated through.

    Serve hot.
